Spicy Corn Quesadilla --------------------- 2 tablespoons veg oil 1 med onion chopped (1 cup) 2 garlic cloves minced 1 med carrot grated (1/2 cup) 1 fresh chili minced (or 1/8 teaspoon cayenne) 3 cups corn 2 teaspoons ground cumin 1 teaspoon ground coriander salt and pepper to taste 1 1/2 cups grated cheddar cheese 8 10" tortilla shells Saute onion and garlic for 5 minutes. Add carrots for 2 minutes. Add chili and spices. Cook covered for 3 - 4 minutes, covered, stirring often. Add pepper. Remove from heat. Add cheese, cover and let stand for a few minutes until cheese partially melts. Fill tortilas, and cook for 2 - 3 minutes on each side in skillet until HOT.
