SERVES 4 INGREDIENTS: 2 pounds of lamb 4 to 5 Tbsp of good extra virgin olive oil 2 Tbsp of italian (flat) parsley 1 small onion 2 cloves of garlic 2 sundried tomatoes 1/2 teaspoon of saffron threads (soaked in a 1/4 cup of warm water for at least 30 to 40 minutes) Salt & Pepper PREPARATION: Prepare the lamb by cutting it into 1 inch cube pieces. Sautee the lamb in a pan with the olive oil until golden brown. Remove the meat from the pan, leaving the juice. Add to the remaining liquid the parsley, onion, garlic, and the tomatoes, all finely chopped. Add the cup of saffron water, including the threads. Bring the ingredients to a low simmer, let it cook until the liquid is reduced by approximately one half of the original amount. Return the lamb to the pan and let it simmer, adding small quantities of water. Continue cooking for 30 to 40 minutes until tender or to your liking. Serve immediately. BUON APPETITO !
